In continuing in our quest to include more fish in our diet, I'm constantly looking for new and wonderful ways to serve fish to my kids. The following dish is becoming a quick family favorite. We've served it up a few times, each with it's own variation on what we have in the house.
Orzo and Shrimp
4 c. chicken broth
2 c. orzo
4 cloves garlic
Frozen cooked shrimp
Olive Oil
Lemon Juice
Parsley
Salt and Pepper
Tomatoes, Kalamata Olives, Green Onion, Artichokes, Feta
Heat broth to boiling and add orzo. Turn head to med and allow orzo to cook through. In the meantime, saute garlic and shrimp on low until heated and cooked through. Toss shrimp, garlic, olive oil, lemon juice, parsley, salt, and pepper into the orzo. Chop and add in any of the extras you desire. We love tomatoes, artichokes, and basil feta cheese in ours.
I just make sure the shrimp is chopped fine and my kids love it. My husband loves it too. One night we were out of shrimp and even made it vegetarian with a green salad. I was afraid he'd miss the shrimp, but even then, he loved it. It's been a huge hit around here.
