This Week: 

What I'm Cooking:

We made a batch of chocolate zucchini muffins this week which is always a family favorite.  I'm sure what it is about these muffins, but they speak fall to me.  Something about the combination of zuchinni and maple flavoring, they make for delicious fall comfort food.

What I'm Reading:

I just finished Cold Case Christianity this morning.  It's been on my list for sometime.  I love how the author was able to systematically investigate the claims of Christianity.  It's just always interesting to see how the Bible holds up to scrutiny.

What I'm Doing:

Our days have been a sweet combination of fall and summer.  Still hot enough to swim, but still cool enough to be on the patio in the mornings.  We've been taking our school work out in the mornings and I bring out my books to read and do some Bible study.  Something about a different environment has opened up new conversation and it's just a nice way to start the day.

This Week: 

What I'm Cooking:

My husband actually made our favorite meal this week.  Sunday night he made a healthier version of falafel and my daughter made the pita.  It's actually a pretty simple recipe, but it always feels like a treat.  Served with some cucumber or green salad and it makes a wonderful dinner.

What I'm Reading:

I'm reading Cold Case Christianity by Jim Wallace for my non-fiction reading.  I always love the way people can examine the Bible and find that it lines up with history and reasoning.  This one's been on my to read list for awhile and I'm glad the library finally got a copy.

What I'm Doing:

We're getting into the swing of fall.  We've been baking, crafting... and still swimming as we're supposed to hit a heat wave again this week.  Always a strange changing of the seasons around here.
 
What I'm Enjoying:

This Week: 

What I'm Cooking:

Yesterday was my youngest baby's birthday!  He's 13!!!
Thirteen years calls for a celebration!  So I made his favorite dinner: parmesean pasta.  This dinner is not for the faint of heart and definitely not BODi approved.  It's full of butter, garlic, and parmesean.  And absolutely amazing!  We had friends over, so they brought bread and a side salad.  And I made brownies too.  A nice pre-celebration before his party this week.

What I'm Reading:

I just finished Lewis' Screwtape Letters last night and I'm still really meditating on it.  Lewis' writing is amazing as it's really stood the test of time.  Everything he talked about in that book is still happening today, and deterring us from following the Lord well.  Have you read it?  What are your thoughts?  I'm excited to share it my teenager soon.

What I'm Doing:

I've been living the Mom Life the last few weeks.  The fall is picking up and kids are busy.  Lydia just made the cast list for The Nutcracker, and Josiah's loving choir.
 
What I'm Enjoying:

Celebrating my 13 year old...
Zone cleaning...

Do-It-Yourself: Key Lime Ice Cream

At the beginning of the year, I set 12 DIY Project goals for 2012.  July's challenge was to try out this yummy looking Key Lime Ice Cream recipe that I've had bookmarked for over a year.  To say that it was fantastic would be an understatement.  Notice the lack of photo this month?  That's because my son and I ate it too fast.  I kept meaning to go back and take a photo, but we couldn't keep our spoons out of it.  

I made a few changes based on our own tastes.  I like mine a little more sour so that was the first change, but all in all, it was one of my favorite recipes I've tried in a long time.  After all, summer is the season for homemade ice cream.  Plus the original recipe includes a link for making ice cream without a machine.  Couldn't be simpler.  Here's the yumminess we came up with:

Key Lime Ice Cream

1 1/2 c. whole milk
1 c. bottled Key Lime juice (I may have even used 1 1/2 c.)
1 c. heavy cream
1 can sweetened condensed milk
Optional: Coursely crushed graham crackers, key lime wedges

Combine milk, Key Lime juice, cream and condensed milk.  

Freeze according to manufacturer's directions.

Crush 1/3 c. of graham crackers and mix into ice cream near the end of freezing.  Transfer to a freezer safe container and freeze for 1 hr or until set.  Serve with crushed graham cracker topping and key lime wedges.

This Week: 

What I'm Cooking:

This is fair week so that means the 16 year old, 12 year old, and I were all baking on Tuesday to get in our submissions.  I played around with a few scone recipes this year and entered my cheddar bacon scones.  The batch was big enough to have some for breakfast the next morning and they were yummy!!!

What I'm Reading:

We picked up the Wilderlore series for our next read aloud.  I'm not typically one for fantasy, but I have to say we are really enjoying this one.  My 12 year old is especially loving it!

What I'm Doing:

We went camping last weekend with my sister in law and her family.  The kids had a great time playing in the campground and swimming at the lake.  I loved the campfire and slow mornings at camp.  And the fact that it was 10 degrees cooler in the mountains.

What I'm Enjoying:

Baking for the fair...
Finding new book series...
Lifting weights...
Afternoon swimming sessions...
Lake living...

This Week: 

What I'm Cooking:

My favorite meal this week was Crockpot Chili.  The weather has been chaotic lately so I'm taking every chance I have to keep adding soups to our menu.  This one is absolute comfort food.  The surprise came when I asked the 12 year old to make cornbread.  I've helped him several times so I felt confident that he could handle it without supervision.  I bet you can see where this one is going. :-) Ended up being ok, but we had to do a little rehab when he accidentally added too much salt.

What I'm Reading:

Currently, I'm working my way through Live Your Truth by Alisa Childers.  She takes popular mantras and addresses them through a Biblical lens.  I love how down to earth her explanations are and how true to real life.  I think I'll be adding this one to my high schooler's personal growth list.

What I'm Doing:

We had a short homeschool week.  Wednesday we took most of the day off to see a local production at the theater: Percy Jackson and the Lightning Thief.  When I saw that we could do this one as a field trip, I knew I had to book it for my 12 year old.  He's obsessed with the Percy Jackson books and it ended up being a fun one to watch.  Now we have today (Friday) off from school to start our break and we're busy in the kitchen with Easter treats.  

What I'm Enjoying:

Meeting new homeschool moms...
Organizing field trips...
Slow mornings....
Bible study with the kids...

This Week: 

What I'm Cooking:

My favorite meal this week was Crockpot Lentil Soup.  Hubby doesn't love this one so on a night he had plans, we did too.  Crockpot Lentil Soup it is!  I love the rustic earthy taste of this one and cooked in beef broth makes it incredible.  Great way to stretch a family meal and so good!

What I'm Reading:

My currently reading list is out of control.  Seriously... OUT OF CONTROL.  But one of the books I've been reading is the Christian Heroes: Then and Now biographies.  Currently I'm reading Amy Carmichael's story.  I love reading how ordinary people have been used in extraordinary ways... and sharing these stories with my kiddos.

What I'm Doing:

This week we took a field trip to a town about a hour south of us.  We went to see the ABT studio company perform on a local college campus.  We haven't spent much time in this college town so find a fun spot for lunch was a treat.  And my 16 year old ballerina was enthralled with actually getting to watch the company perform.  It was definitely worth the trip.

What I'm Enjoying:

This Week: 

What I'm Cooking:

My favorite meal this week was our lettuce wraps.  Oh, this is a "stuff yourself silly" recipe that pleases even our pickiest eater.  Since lettuce wraps can be so messy, we've actually turned this dinner into more of a salad or bowl just be layering the ingredients.  That way no one gets too frustrated to enjoy dinner.  But the sauce is so yummy with just the right balance of sweet and salty.  And it's light and fresh for a refreshing meal.

What I'm Reading:

I just finished The Hiding Place on Monday.  I knew the story of Corrie ten Boom and in fact, read the YWAM Christian Heroes: Then and Now biography with my 7th grader this past fall.  It's hard to be in Christian circles and not know something about the Ten Booms.  However, this was the first time I've ever read The Hiding Place and it was so powerful.  It's amazing to hear all that this family went through and accomplished during the Nazi occupation in Holland.  I can't wait to share this one with my 10th grader.

What I'm Doing:

This week was a bit of a breather for us.  We didn't have much on the calendar other than school and that was a good things since the rest of the month is going to be busy.  We did, however, have roofers at our house at the end of the week.  It will be nice to have that taken care of for insurance purposes, but it did make for an interesting schooling situation.

What I'm Enjoying:

A break in the rainy weather...
