I've been making one variation or another of Stuffed Peppers since my husband and I have been married. They're a great way to stretch a meal and extremely nutritious. Not to mention incredibly tasty. So when I found this Orzo Stuffed Pepper recipe on Pinterest, I had to try them.
Completely vegetarian, the chickpeas give these peppers depth and the sun dried tomatoes and feta provide tons of flavor. Served with broccoli slaw, this dinner was almost too much food for me. Who would have thought?
