Pumpkin Oatmeal Chocolate Chip Cookies

Our family loves everything pumpkin. There's something comforting about the "warm" that comes through when you combine pumpkin, ginger, and cinnamon. Perfection!

So when I found this recipe last year, we quickly copied it down, knowing it would be a classic.

And then we added the Chocolate Chips!

These cookies can be found in our house from September through January. But if you want some, you'd better grab them quick. They go fast. Enjoy!

Pumpkin Oatmeal Chocolate Chip Cookies

1 stick butter
1 c. brown sugar
1/2 c. sugar
1 c. pure pumpkin
2 eggs
1 tsp. vanilla
1 c. flour
1/2 c. whole wheat flour
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
3 c. rolled oats

As many chocolate chips as you'd like!!!

Preheat oven to 350 degrees. Beat together butter and sugars. Add pumpkin, eggs, and vanilla; beat. Mix in combined flours, baking soda, and spices; stir in oats and chocolate chips. Drop onto greased cookie sheets. Bake 10-12 minutes.
